Pear Muffins!! Yum!


Get that fresh fruit while the getting is good, and make these yummy pear muffins. Super Easy and gluetin free, and oh so delicious.

Pre-heat oven to 350 degrees


4 pears cut into 1/2 inch pcs / 1 1/2 tsp coconut oil / 3 Tbsp Water / 1 1/2 tsp cinnamon / 9 eggs / 3 Tbsp coconut milk / 1 1/2 Tbsp coconut flour/ 1/4 tsp baking soda / 1/2 cup walnuts chopped


Place coconut oil in medium sauce pan, add in pears, water, cinnamon, sautee until it is the consistency of chunky applesauce.

While that sautee’s crack the 9 eggs into a large bowl, add in the coconut milk and whisk together well. Add in a 1/2 tsp cinnamon, the coconut flour and stir well. Once blended add in the baking soda and stir again.

Add the pear mixture to the egg mixture, and 1/2 of the chopped walnuts and mix.

Grease your muffin pan, and spoon in mixture and sprinkle a little walnuts on top of each muffin. Bake for 40 minutes.
