Pasta, the one thing every diet says to avoid, but not anymore with this delicious recipe for pasta made from butternut squash!
1 medium/large butternut squash | 1/2 Cup Ghee (clarified butter) | 2 tsp cinnamon | 6 sage leaves | pinch of salt | 1/2 Tbsp Red pepper flakes | 1/4 Cup macadamia nuts crushed
Peel and seed the butternut squash.
Use a slicer (paderno slicers work great) to cut into spaghetti noodles
In a medium to large saucepan, melt ghee (butter). Add the cinnamon, salt, and nutmeg
Add sage leaves and continue to cook until the leaves begin to turn brown and crisp up.
Reduce heat and toss the squash spaghetti into the sauce. Mix to coat evenly.
Let the mixture rest. Serve with crushed pepper flakes and a dusting of crushed macadamia nuts.
