The Sweetest No Sugar Pork Chops Ever!

Sometimes sweet and savory is the only thing that will hit the spot. These mouthwatering pork chops will give you your protein in a new a satisfying way.

1 Tbsp olive oil | 1/4 Cup Honey | 6 (1/2lb ) Pork filet | 3 sweet in season apples (Pink lady, Honey crisp etc..) | 1/8 tsp chopped sage | 3 bunches of spinach | 4 Tbsp pine nuts | 1 Fresh lemon, juiced | 1/2 tsp salt | 1/2 tsp pepper

Slice the apples into horizontal slices approx. 1/5 inch thin.

Preheat oven to 350ºF.

In a small pan, combine olive oil and honey over low heat until honey has melted. Add pork. Glaze the pork filets in the honey mixture and cook both sides for around 2 minutes.

Place backing paper in a baking tray and lay out 6 groups of 4 apple slices. Brush with honey mixture, then top with sage and pork filets. Top with 2 more apple slices and another coat of honey mixture.

Bake for 1 5 –2 0 minutes or until the apples are caramelized and golden and the pork is cooked.

In a frying pan on low heat, roast the pine nuts and stir until golden brown. Steam spinach until cooked; mix in a squeeze of lemon juice.

To serve, place a pork apple stack on a plate accompanied by the spinach topped with pine nuts.
