Meatloaf is a versatile meal that is easy to make and using variations in the type of meat will keep the whole family happy!
2 carrots | 1 zucchini | 1/2 Cup peas | 1 onion | 1 lb ground meat (beef, lamb or turkey) | 1 Egg | 1 tsp Italian herbs | 1/2 tsp Salt | 1/2 tsp Pepper |Sugar free Ketchup or bbq sauce
Preheat oven to 350ºF.
Grate carrots and zucchini coarsely, then squeeze through hands to remove as much excess liquid as possible. Dice Onions. Place in a large mixing bowl with peas, ground meat, egg, herbs, salt, and pepper. Combine well.
Using a muffin tray, line each individual muffin hole with baking paper. Tightly pack meat mixture into each muffin hole. Or to make a traditional loaf, use a loaf pan, score each loaf with a fork and lightly add the ketchup or bbq sauce to the tops of the loafs.
Bake in the oven for 30–40 minutes or until top is golden brown and meat is cooked through. Serve.
