Summer is a time for bathing suits, swimming, and just about everything outdoors, it is a time when one wants to eat healthy, but the barbecue is hot! Here are two summer salads that won’t leave you hungry and will go brilliantly with all that barbecue!
Sweet and Healthy Fruit Salad
1 container vanilla low fat greek yogurt | Apples | Strawberries | banana…..Really any and ALL Seasonal Fruits that you like | 2 Tbsp Cinnamon | Granola
Cut up fruit, and a lot of it, this salad will last for a week in the fridge so it can be the go-to snack as well as a side salad. Fold the fruit into the entire container of yogurt as well as 2 Tbsp of Cinnamon.
When ready to serve put a 1/4 cup of granola over each individual serving

Simple Spaghetti Salad
1 Box Spaghetti noodles | 1 block Colby jack cheese | 1 block Swiss cheese | head of broccoli | Salt and Pepper | Scallions | Cherry Tomatos |Low fat Italian Dressing
Cook the noodles according to directions. Rinse in cool water and set aside. In a large bowl cube the two types of cheese. Rinse and cut up the broccoli florets add to the bowl, and throw those noodles into the mix. Use 1/2 cup of Italian dressing and salt and pepper to taste. Mix well and refrigerate prior to serving.
