Our lives are invaded by sugar, processed foods, preservatives and worse, and it is time to take our sweet tooth’s back from the grocery store and make no sugar coffee blueberry brownies! Make it yourself and chose the freshest of ingredients and enjoy this decadent treat.
1 Cup coconut cream (concentrate) | 3 cage free eggs | 1/2 Cup organic honey | 1 Cup Pecans | 1/4 cup cocoa powder | 1 Tbsp Cinnamon | 1 Tbsp Ground Coffee | 2 tsp. Vanilla | 1/2 tsp baking soda | 1/2 tsp Sea Salt | 1 Cup of Blueberries
Preheat oven to 325°F. Put coconut cream, eggs, honey, pecans, (crushed) cocoa powder, cinnamon, ground coffee, vanilla, baking soda, and salt in a bowl. Use hand-mixer or stand mixer to combine all ingredients until well mixed. Fold in blueberries by hand so you don’t crush them.
Pour the batter into a 9 x 13″ baking dish brushed with coconut oil or into mini-muffin pans.
Bake for approximately 30 minutes. Check with a toothpick at about 25 minutes. Remove from the oven and allow to cool.
DRIZZLE the melted coconut cream concentrate all over the cooled brownies.
