There are so many ‘experts’ out there that tell us what to eat, when to eat, what not to eat……Sigh…….it gets confusing to those of us that want to maintain a healthy lifestyle. Organic, cage free, low fat, no sugar, it is just all too much, and it is time to go back to the basics. Using natural ingredients can get you delicious and nutritious foods like these blueberry mango muffins.
What you will need:
3 eggs | 3 Tbsp Honey | 2 Tbsp Coconut oil | 2 Tbsp Coconut milk | 1/4 tsp Salt | 1/4 tsp vanilla | 1/4 tsp baking powder | 1/4 Cup coconut flour | 1/2 cup diced mango | 1/2 cup blueberries
Pre-heat the oven to 400°F.
Mix together eggs, honey, coconut oil, coconut milk, salt, and vanilla. In a separate bowl sift together the baking powder and coconut flour, and then combine in the bowl with your wet ingredients. Mix well, and then fold in diced mango and blueberries. Spoon into 9 muffin tins and bake for 20 minutes or until done.
