Healthy, Delicious Snacks, You Will WANT to Make!

One sweet and one savory, everyone will be happy to eat these healthy treats. Eating clean doesn’t have to hurt, and these two recipes are a family favorite.

Baked Zucchini and Squash Spears

Snacks raw zucchinniTake a cookie sheet and line it with wax paper and place a wire rack on top. Coat rack with 1/2 tsp olive oil

1 Zucchini cut into spears | 1 Squash cut into spears | Olive oil | 1/2 cup grated Parmesan | 1/2 tsp dried thyme | 1/2 tsp dried oregano | 1/4 tsp garlic powder | 1/2 tsp kosher salt |1/4 tsp black pepper |

In a bowl mix the Parmesan cheese, thyme, oregano, garlic powder, salt and pepper.

Take the zucchini and squash spears and toss with 1/2 tsp olive oil. Take 1/2 the dried mixture and mix in with the spears. Place the spears on the rack and sprinkle with the remainder of the dried ingredients.

Bake on 350 for 15-18 minutes

Baked Oatmeal Squares

3 Cups Oats | 3/4 cup brown sugar | 1 1/2 tsp baking powder | 3/4 tsp ground cinnamon | 1/2 tsp salt | 2 1/2 cups of milk | 2 eggs lightly beaten | 4 tablespoons unsalted melted butter | 1 tablespoon vanilla | blue berries | strawberries | blackberries | raspberries

In a large bowl mix together the oats, brown sugar, baking powder, cinnamon and salt. In a second bowl mix together the milk, eggs, butter and vanilla. In a large baking dish wipe with olive oil, then a small amount of flour to cover completely to avoid sticking. (or spray with all natural cooking spray)

Take 1/2 the oats mixture and spread across the bottom of the pan, add blueberries, strawberries and black berries and raspberries  randomly.  Place remaining oats on top. Slowly pour the liquid over the top of the mixture, add more berries to the top. Sprinkle some brown sugar over the entire top.

Bake at 350 for 40 minutes! Cut into squares and serve warm or cold.
