Chicken with mustard tarragon sauce
4 boneless chicken breasts | 1 1/2 Tablespoons butter | 2 finely chopped shallots | 1/2 cup white wine | 2 Tablespoons Dijon mustard | 1/2 cup heavy whipping cream | 2 1/2 Tablespoons fresh tarragon
Melt the butter in a large skillet over medium heat. Add the chicken breasts and cook through on both sides approx. 5 minutes per side . SUBSTITUTE Olive oil for a healthier option’
Transfer the chicken to a platter and cover with foil to keep warm
Saute the shallots in the same skillet for 1 minute. Add the wine and mustard and bring to a simmer. Add the cream and 1 1/2 tablespoons of the tarragon. Simmer, stirring often about 3 minutes.
Return the chicken breasts to the skillet and heat through. Season the dish with salt and pepper to taste. Ser the chicken breasts with the sauce and sprinkle on the remaining tarragon.
