Easy, Healthy Stir Fry

Getting healthy and eating clean does not have to be hard or painful. Some simple solutions and some fresh easy to find ingredients can take a meal to new tasty heights!

The recipe below is fun as one can add or remove which ever ingredients they wish. Use what is on hand, use left overs, use anything one may have on hand, and THAT is the beauty of cooking without borders

Simple Stir Fry –  Baked skinless chicken breast | Broccoli | Red Peppers | Yellow Peppers | Onions | Low Sodium Soy Sauce | OPTIONAL – bean sprouts, water chestnuts, and peas

Rub Chicken breasts with olive oil and a little salt and pepper (use any additional spices you like) Bake for approx. 10-15 minutes per side depending on size.

Cut up broccoli, peppers and onion, (we also like snap peas, water chestnuts and some bean sprouts in the mix)

Put all the veggies into a sauce pan with a tablespoon of olive oil, cover and cook approx 10 minutes. Cut up the chicken, and add to the veggies, add soy sauce to taste, this will depend on the amount of veggies, and can be from 2 Tablespoons to 1/4 cup.

Stir for another 5 minutes and serve!
