Diet! The most hated four letter word in the English language, its hard to master, its hard to maintain and its hard to keep on track. Being a serial dieter myself, I have found some recipes that have changed the way I eat, and have given me a delicious eating lifestyle I can live with.
The problem with most diets is it is HARD to just cut out all the things you love to eat. So instead of doing that, just insert some of these healthy and yummy food options.
Not your Mama’s Chicken Salad – Take two boneless skinless chicken breasts and season with olive oil, salt and pepper. Bake at 350 for approximately 15 to 20 minutes each side (depending on the size of the breast you will have to adjust the time accordingly)
Cut up the chicken breasts – cut up lettuce – cut up grapes
In a large bowl mix all the above together with a couple of tablespoons of Olive Oil and sea salt to taste! Best salad ever!
Chili – Sometimes just a couple of substitutions can make any recipe better. Use Turkey in your chili and black beans and reduced fat shredded cheese to top it off for a healthy alternative to beef chili.
Chicken Vegetable Soup – One of our favorites! 4 Baked Chicken Breasts diced, 1 1/2 cups cabbage chopped, 1 large carrot chopped, 1 large onion chopped, 2 large celery stalks chopped, a 15 oz can of crushed tomatoes, 14 ozs of fat free chicken broth, salt and pepper to taste.
Place everything into a large pot except the chicken breasts, simmer for about an hour until the veggies are soft, then add the chicken and simmer until heated through…..about 15 minutes.
Breakfast Scramble – I HATED the thought of eating egg whites….ugh, until I found this recipe! 4 Egg Whites, 3/4 cup of chopped red onions, 1/4 cup diced tomatoes, 1/4 cup reduced fat feta, a handful of spinach leaves, salt and pepper to taste
Start by wilting the spinach in a little olive oil, add in everything except the feta, when ready to flip, add the feta crumbles before turning the eggs over. Delish!
