We all want easy ways to make good nutritious homemade meals, but even in the biggest of kitchens, it can be elusive. I thought taking a look at some easy make ahead meals would benefit those in the smallest of kitchens!
Salad in a Mason Jar – Simply take as many jars as you wish, and the key is to put the dressing on the bottom and the lettuce on the top. In between one can put whatever they like, cucumbers, tomatoes, anything. When it comes time to eat, simply turn the jar on its lid for a minute or two, shake and a fresh salad is ready to eat.
Cabbage Slices – Cabbage can be sliced and bagged until you are ready to cook. Simply take the desired number of slices and place on a cookie sheet. Olive oil on each side, cracked pepper and salt, put in the oven until the edges are just turning brown (350 for about 30 minutes) Delish!
A lot of people living in small spaces like their crock pots and other slow or fast cookers, and that is all good. I however prefer the freshest meals I can get, and veggies and salads are something that will keep and travel well.
Tomato Salad – Easy as 1, 2, 3! Just take 3 Tomatoes, 3 cucumbers, 1 onion, 1/2 cup apple cider vinegar, 1 teaspoon of cracked pepper, 2 table spoons of sugar (TOTALLY YOUR CHOICE… Me, I say without), 2 teaspoons of salt, ( I would cut down on the salt too )1 cup of water, 1/4 cup of olive oil, mix well…thats it.
Let it chill for 1-2 hours. A Summer Favorite! For a little flair add a little crumbled Feta!
